Drawing inspiration from the regions’s nature, rugged and wild, yet elegant and earthy, our cuisine is creative while echoeing tradition. We create seasonally variable menus based on the finest local produce available. We grow or collect in the wild all of the mushrooms as well as many wild berries, herbs and greens.
We also grow many vegetables in our gardens and procure legumes, honey, meat and dairy products from local small producers.
